Do you like celery? I actually love it! I truly believe that when you change your diet to mostly plant-based foods, your palate changes. I really crave very earthy-tasting veggies. Eating celery plain is enough for me, but adding humus or peanut butter increases the nutritional value. Although celery is made up of 95% water it is loaded with fiber, antioxidants, potassium, and vitamins (A, C, K, and Folate). Buying organic as much as possible is also a good practice.

Juicing celery several times a week is part of my healthy eating routine. Some people do not juice because of the time it takes and also the pulp that is often wasted.
